Ebisoba Ichigen was born in 2008 in Sapporo Susukino. Although the restaurant struggled to find its way in the beginning, through trial and error, it invented the golden ratio of sweet shrimp and quickly became a popular restaurant.
Three years later, we opened a branch in Hokkaido Ramen Dojo at New Chitose Airport, and it became a thriving restaurant with a huge line of customers. Since then, Ichigen has expanded to Shinjuku, Yaesu Underground Mall, and Tokyo Solamachi, attracting many customers from locals to tourists.
Ichigen is particular about seven things: (1) the crimson bowl, (2) the choice of two types of noodles, (3) the original shrimp soup, (4) the shrimp-flavored tenkasu (crunchy bits of deep-fried dough), (5) the thick flavored eggs, (6) the char siu pork, and (7) the shrimp powder, which gives the dish its distinctive flavor.
When all of these ingredients are served to our customers in their best condition, our soup is loved by many customers, including celebrities and famous people.
